Le carpaccio de betterave à l'huile de noix, thon et éclats de noix
Voici une entrée fraîche, simple et pourtant raffinée. J'utilise peu la betterave en cuisine mais en carpaccio et avec du thon je trouve ça très bon. De plus on peut dresser les assiettes à l'avance et les réserver au frigo.
Ce qu'il vous faut !
Pour 4 assiettes:
° 2 betteraves cuites
° 1 boîte de thon
° 10cl de crème fraîche épaisse
° quelques cerneaux de noix
° 4 poignées de mâche
° 1/4 de baguette
° huile de noix
° vinaigre balsamique
° sel, poivre
La recette !
Emincer finement les betteraves à la mandoline et les disposer sur 4 assiettes. Arroser de vinaigre balsamique et d'huile de noix, saler et poivrer.
Emietter le thon, ajouter la crème fraîche et mélanger. Saler et poivrer.
Couper des tranches de baguettes et les faire griller, puis les recouper en deux.
Façonner des quenelles de thon à l'aide de deux petites cuillères et les déposer sur la betterave.
Parsemer de morceaux de noix, puis déposer légèrement en biais les morceaux de pain contre les quenelles de thon. Déposer une feuille de mâche à côté de chaque quenelle et ciseler le rester, puis déposer au milieu de l'assiette. Assaisonner avec de l'huile de noix et du vinaigre balsamique.
Servir bien frais.
